Cheesy Mexican Bake w/ Corn, Black Beans, and Red Peppers

Cheese is love, cheese is life. There is no better feeling than biting into to gooey, cheesy food. That’s why I love quesadillas. But did you know that that tortilla can run you over 150 calories? That’s why I made this cheesy Mexican bake. It’s like the quesadilla without the tortilla. And. It’s. Cheesy. Hella cheesy.

Oh and did I mention the whole tray is just 340 calories. Mhmmm.


  • 130 grams corn
  • 140 grams red peppers, chopped 
  • 100 grams black beans 
  • 42 grams reduced fat Mexican cheese
  • 1/2 tsp olive oil


Preheat the oven to a broil. You wanna get that cheese nice and gooey and crispy.  Heat your Olive oil in a nonstick pan under medium and cook your corn and peppers till browning. Place them in a small casserole dish and mix with your black beans. Top with the cheese and broil for about 2 min. Keep an eye on it though, you don’t want burnt cheese. Actually, I’d eat burnt cheese. I’d eat any cheese. 

Nutrition: 340 calories, 20 grams of protein, over 200% vitamin C and 14 grams of fiber

Yea that’s right quesadilla, I just one-upped you. Big time.
