This is an extremely simple recipe and involves just 4 ingredients: zucchini, corn, lemon juice, and salt. Just mix half a cup of corn with as much zucchini, sautéed without oil in a nonstick pan, as you want and then toss with lemon juice and salt. Serve cold. For some reason I just love corn way too much but hey, more fiber for me I guess. What do you guys like to eat with corn?
