Nachos really are delicious but they are also unhealthy. Hella unhealthy. Isn’t it crazy that 1 tortilla chip can have 20 calories. It’s legit like they are trying to make it high in calories. But these nachos are low calorie, healthy, and delicious. They also are not yo nachos but they can be if you just follow this simple recipe. Sorry for the awful joke there it had to be done.
- 1 tortilla (I used Joseph’s flax which I normally use when making recipes)
- 120 grams corn
- 50 grams black beans
- 35 grams Mexican cheese (I used Sargentos reduced fat)
- Chili powder
So take your tortilla and cut in half, then cut it again, then again. You should have 8 chips. Add a quick spritz of EVOO, spread them on a shallow pan, and bake for 8 minutes at 350. Flip them and bake for 5 more minutes. In a bowl mix your corn and black beans with your spices. Pour them over your chips and top with the cheese. Place your tray back in and increase the temp to 450 and bake until the cheese is melted. Serve with avocado, Greek yogurt, salsa, the blood of your enemy, anything really.

Last time I had nachos, the calorie count was the same but with an extra 0. Mhmmmmmm. That’s right. I’m a genius (atleast that’s what my mommy says.)
