Black Bean Rotini with Roasted Vegetables and a Marinara Sauce

Pasta is delicious but sometimes it can be so unhealthy. Made of mostly refined carbs with little fiber or protein, pasta isn’t exactly a health food. That’s why when I found Trader Joes black bean rotini, I was hype. So damn hype. So here I introduce to you all my pasta dish made with random veggies because….. nutrients.

Ingredients:

  • 3 oz black bean rotini
  • 4 oz Brussel sprouts
  • 6 oz zucchini
  • 1/4 cup marinara sauce
  • Olive oil spray 
  • 5 grams Parmesan

Recipe:

Preheat the oven to 400 and spray a baking pan with olive oil. Cut your Brussel sprouts into fourths and roast your Brussel sprouts for 40 minutes, tossing occasionally. Cut your zucchini in to peices and pan roast with som Olive oil until browning. In a pit, heat your water on high till it boils, then add your black bean rotini. Bring heat down to medium and cook for 9 minutes. Drain and place in bowl with Brussel sprouts and zucchini. Toss and plate, top with sauce and cheese.

NOTE: Black bean rotini does NOT taste just like pasta, it has a NEANT taste but the red sauce accompanied it well.
