Grilled Halloumi w/ Honey Roasted Carrots and Green Beans

About a year ago, I went to Greece with my mom and dad and I discovered the wonder of Greek food. Olives, gyros, cheese, and more cheese. I honestly think I have an unhealthy obsession with cheese. Anyways, it was in Greece where I tried Halloumi cheese and fell in love for the very first time. No, I’m not being dramatic. Anyways, I’ve been experimenting a bit with Halloumi and since it’s so salty I decided why not add a sweet component. Sweet n salty amirite? And I added green beans just cuz. I like green beans. Sue me.


Ingredients:

  • 3 oz Halloumi cheese
  • 6 oz carrots
  • 1/2 tsp honey
  • 1 1/2 tsp Olive oil, separated 
  • Thyme
  • Basil
  • Salt
  • 3 oz green beans

Recipe:

Preheat the oven to 425 degrees Fahrenheit. Cut your carrots into French fry shapes and toss them with half a tsp of oil, the honey, thyme, and basil. Take your green beans, trim off the pointy bits, and cut in 2 inch long logs. Toss with half a tsp of olive oil and salt. Place carrots and green beans on baking tray and roast for 20-25 min or until the green beans look dehydrated and your carrots are a bit blackened and soft. To prepare the Halloumi, heat half a tsp of Olive oil on medium low heat. Place Halloumi block on and seat each side till browning, about 2-3 ish minutes. Serve on top of carrots and green beans and enjoy your trip back to…. a weird fusions old of Greek cheese and vegetables. Probably Mars.
